Preparation: BAKE: BRUSH half sheet pan with liquid margarine or use a light spray of vegetable pan cooking, or as an alternative, use a pan liner. PLACE roll dough pieces in a 4 x 4 configuration on a half sheet pan. HOLD overnight in a refrigerator for 12 -- 24 hours. When thawing overnight cover the rack or place a bag around the tray to prevent dough from drying. PROOF the dough at 110°F/80% humidity in a proof box for approximately 45 minutes or until the dough balls touch on all 4 sides. PREHEAT convection (Hobart/Blodgett) oven to 350°F (375° F for standard oven). In a Lang oven use 325°F. BAKE for 8 to 12 minutes (12-15 minutes in standard oven). Add an additional 1.5 - 2 minutes for each additional pan baked.
