A hearth-baked baguette that has been given an extra long fermentation to bring out the sour notes in the bread. The flavor profile of this bread is distinctly sour at the finish. The bread is a rounded cylinder with pointed ends, flat on the side where it is baked on the hearth. It is golden brown with three distinct cuts on top and the base is lightly dusted with semolina. The interior is hearty and chewy, and shows the random, very open cell structure that is typical of well fermented bread doughs . The aroma is a combination of baked notes and sourdough. This bread is distributed as parbaked and frozen, ready to be final baked and served.
