Pioneer Western Style Buttermilk Pancake Mix, 1 x 25 lb Case from Pioneer is a foodservice case item for commercial programs, retail stocking, and planned bulk purchasing. At C. H. This flour goes into every batch of pancake and waffle mix we produce, giving you light and fluffy pancakes that won’t absorb as much of expensive syrup as other pancake mixes, saving you food costs.

Preparation: BAKE: Preheat griddle to 375° to 400°F. Put 3 quarts + ½ cup water in large mixing bowl. Add 5 lbs Pancake Mix. Blend with wire whisk until dry mix is well incorporated. (A slightly lumpy batter is acceptable.) Pour or ladle pancakes to a 5-inch diameter. Flip when edges begin to dry (approximately 1 1/2 minutes). Flip only once. Bake approximately 1 1/4 to 1 1/2 minutes on second side. Serve. For 7-inch Waffles: Preheat waffle iron, Put 3 quarts + 1/2 cup water, 10 Large Eggs, beaten, and 1 1/4 cups oil in mixing bowl. Blend well with wire whisk. Add 5 lbs. Pancake Mix. Blend with wire whisk until all dry mix is incorporated. Ladle 4 1/2 ounces of batter into lightly oiled waffle iron. Bake 3 minutes. Serve.
