  • Preparation: BAKE: SMALL BATCH: 5 lbs. Base 1 lb. 12 ozs. Eggs 1 lb. 8 ozs. Oil 1 lb. 2 ozs. Water LARGE BATCH: 50 lbs. Base 17 lbs. 8 ozs. Eggs 15 lbs. Oil 11 lbs. 4 ozs. Water HANDLING: 1. Combine BASE and EGGS; mix for 1 minute on low speed and then 3 minutes on medium speed. 2. Add OIL and WATER and mix 1 minute on low speed. 3. Scrape down; mix another 2 minutes on low speed. 4. Deposit into prepared pans. 5. Garnish as desired. BAKING: STANDARD OVEN: Bake at 350 - 375 degrees F for about 35 minutes or until done. CONVECTION OVEN: Bake at 325 - 350 degrees F with LOW FAN for 30 - 35 minutes or until done. RACK OVEN: Bake at 350 - 375 degrees F for about 30 - 35 minutes or until done. **NOTE: Bake times will vary according to the deposit size, garnishes, and individual shop conditions.
