Mix until smooth 5) Mix for 5 minutes in 2rd speed on 3 speed mixer 6) Mix in 1st speed and add ½ lbs minutes in 1st speed. 7) Continue mixing for 7 to 10 minutes in 1st speed.To mix 2 cubes in 40qt bowl: double water amounts and mix in 1st and 3rd speed on a 4 speed mixer.
