Add water gradually to mix and stir until blended. 2. For light, fluffy pancakes, avoid over mixing. 3. Cook pancakes on a lightly greased, preheated 375°F griddle 1 1/4 to 1 1/2 minutes per side. Turn only once. 4. If batter becomes too thick upon standing, thin with additional water. Do not eat raw batter. YIELD: 5 lb mix makes about 105, 4-inch pancakes.
