A hearth-baked loaf that has been given an extra long fermentation to bring out the sour notes in the bread. The flavor profile of this bread is distinctly sour at the finish. The bottom of the loaf is dusted with semolina. The interior of the loaf is hearty and chewy and shows the random very open cell structure typical of well fermented bread doughs. The aroma of the bread is a combination of baked notes and sourdough. Distributed as parbaked and frozen, ready to be final baked and served.
